Weigh In!

Before stepping on the scale yesterday, I said to the leader: "I will be shocked if I did anything good this week progress-wise" She replied with - well prepare to be shocked.

I lost 2.4 pounds this past week..... despite me having a giant margarita last Friday night, and despite me working 15 hr days and eating not as healthy due to a lot of busy stuff going on right now. YES!


This means I met my first goal of 11 pounds. I've currently lost 11.4 pounds....just from eating a little better. I plan on adding some more activity and cutting some more things out of my diet soon which will probably help me lose even more.

I changed my little progress bar on the right, since I met my first goal. The next goal is to lose a total of 22 pounds...I only have 10.4 more pounds to go. For the first time ever, I feel like this is attainable.

I know I can do it. I just have to keep at it.

Indian Food

Our department hosted a lunch today and catered in Indian Food from Bombay Grill. I was kind of hesitant, but ate the chicken curry, rice and pita bread type things. It was good but a bit spicy for me. My stomach has been grumbling a bit - I think i'll eat something bland for dinner.

I'm hoping that my weigh in tomorrow is good.I'm just 2 pounds away from my first goal. I have so much more to go, but that first goal of 11 pounds will be so great to reach. I'm not gonna hold my breath though, since I've been so busy and eating not as fantastically the past week. Baby steps. I have to keep telling myself that.

At least the numbers ARE going down, even in small doses.

I feel like I have completely changed how I eat, and just so much about myself in a month. It's a good thing, definitely

Weigh In

So I lost .8 pounds this week. It wasn't monumental but it's another loss.

YAY!

It's been a little stressful this week preparing for the art exhibition I'm putting together, and at work, most of my meals have been catered this week. It's been rough not being able to make the choices I would have normally have made for food, but I survived. I didn't take the cheesecake brownies. I didn't touch the cake covered in icing. I rocked it out with self control.



By the way - - for some reason I didn't see all of your comments until a few minutes ago. I'm having some blogger comment issues. I don't even see how you guys were able to leave a comment, because I just added the Comment button (didn't know it was unchecked). Hi I work with technology hahaha.

Easy Chicken Tetrazzini


Easy Chicken Tetrazzini

I made this chicken Tetrazzini from a recipe I got on the weight watchers website on Sunday night and it was delicious! I thought I would show you a photo of the end-product and give the recipe below.

1 tbsp reduced-calorie margarine
1/2 cup(s) scallion(s), chopped (about 5 scallions)
8 oz button mushrooms, sliced
3 tbsp all-purpose flour
1/4 tsp garlic powder
1/8 tsp black pepper
1 cup(s) fat-free chicken broth
1/2 cup(s) fat-free skim milk
1/2 pound(s) chicken breast, cooked, skinless, cubed
1/4 cup(s) canned pimento, drained and sliced (about a 2 oz jar)
2 tbsp sherry cooking wine
3 1/2 tbsp grated Parmesan cheese
8 oz uncooked spaghetti, broken into thirds and cooked
Instructions
Melt margarine in a large saucepan over medium-high heat. Add scallions and mushrooms; cook until tender, stirring, about 5 minutes. Combine flour, garlic powder, pepper, broth and milk in a small bowl; mix until well blended. Add flour mixture to saucepan; cook until mixture boils and thickens, stirring constantly, about 10 minutes.

Add chicken, pimentos and sherry; cook until thoroughly heated, stirring occasionally, about 2 minutes. Stir in cheese and add cooked spaghetti; toss gently. Yields about 1 cup per serving.

Flavor Booster: Porcini mushrooms, prized in Italian cooking, will add a woodsy taste and meaty texture to this dish. Although fresh are rare, you’ll find dried porcini in gourmet and natural food supermarkets. Measure a half cup into a heat-proof bowl. Cover with boiling water and soak for 10 minutes. Drain and use in place of the button mushrooms.

Weigh-In

I got weighed in today and I lost .4 pounds.  It wasn't as big as my 6 from last week, but I am happy with it.  

Yay for loss!


By the way - I am absolutely appalled (how's that for an Eileen word) that someone has come 2 wks in a row to the weight watchers meeting with a 44 oz soda from sonic and ATE a burger and fries while in the meeting.  Are you kidding me?!  It's rude and distracting all in one.  That's just wrong.   

I mean would they let an alcoholic come with a beer to aa?    NO!

King Ranch Chicken


So I made King Ranch Chicken Casserole tonight for the first Time. I used mom's recipe and it was DELICIOUS! Emerson loved it too. I'm actually excited to eat my leftovers tomorrow for lunch.

Yesterday I bought 2 wks worth of groceries. I've never planned that well for meals. I'm kind of excited about it. Lots of things in the fridge and it's all healthy. yay

Since I have lost some weight, the amount of points I can eat a day are getting smaller, I got pushed down 1 point due to this weight loss. I know it is just one point, but it feels like this will be a little more challenging. ack!

Weigh in 03/04/09

So I joined a new weight watchers group today - and it is SOOOO much better.

I lost another 6 pounds! YAY!

This brings my total loss so far to 7.8 pounds. I'm not sure when I have ever had success like this. I'm so excited and proud of myself. I did good despite eating a bit off the beaten path this past week (nachos and chicken parmesan, etc yummm)

I'm looking into buying a bike right now. I want a cruiser. Something like this:

slow week

Well, I was extra busy this week. I didn't do as great with food. I ate only a .5 or 1 point over what I should have, but I knew the choices I was making wasn't as great.

I didn't get weighed in this week because I was dealing with the red tape drama of getting my money back from the weight watchers group i wanted to leave. I finally did, and so this weekend I am buying the monthly pass. Luckily, my free eTools hasn't been cut off from the old group, so i am tracking like crazy.

According to my scale, I have lost 2 lbs in the past week and a half. Not as dramatic as I'd like, but I am very pleased.
